Best Cherry Pie

Ingredients:

Units: US (Imperial)
• 1 1/4 cups sugar
• 3 tablespoons cornstach
• 1/4 teaspoon sals
• 1 tablespoon butter , softened
• 2 (14 1/2 ounce) cans pitted tart cherries , drained and reserving 1/2 cup juice
• 1/4 teaspoon red food coloring
• 1/4 teaspoon almond extract
• 2 teaspoons lemon juice
• 1 pastry for a double-crust 9-inch pie

Directions:
1. Preheat the oven to 400 degrees F.
2. Drain your cherries and keep 1/2 cup juice.
3. Combine the sugar, salt and cornstarch.
4. Combine the cherry juice, almond extract, lemon juice and food coloring.
5. Add the latter to former, drier ingredients, and mix well.
6. Add the cherries and stir well again.
7. Add butter and let it for a quarter of an hour.
8. Pour the cherry mix in the pie crust and finish the top with a lattice work pie crust.
9. Bake the pie for 50 or 55 minutes.
10. Use a toothpick to check if it is baked
