Delicious Cherry Pie

delicious cherry pie Original recipe yields 1 pie or 6-8 servings

• 1 recipe pastry for a 9 inch double crust pie
• 1 (20 ounce) can pitted sour cherries
• 1 cup white sugar
• 1/3 cup all-purpose flour
• 1/8 teaspoon salt
• 2 tablespoons butter
• 1/4 teaspoon almond extract
• 1/4 teaspoon red food coloring (optional)
• 1 egg yolk

1. Preheat oven to 220 degrees C (425 F). Make pastry and leave it to cool in the refrigerator.
2. Drain the cherries and reserve 1 cup of the liquid. Combine sugar, salt and flour in a saucepan. Stir in the cherry liquid, bringing to a boil and stirring consistently. Reduce the temperature and simmer it for 5 minutes. The mixture should thicken.
3. When it has thickened, add almond extract, butter, cherries and food coloring. Cover the dish and refrigerate to below room temperature.
4. On a lightly covered surface, roll half of the pastry out into an eleven-inch circle. Put it into a nine-inch pie dish. Roll the other half of your pastry into another 11-inch circle. Using a pastry wheel or knife, cut eight half inch strips.
5. Pour the cooled cherry filling in the pie dish. Put the pastry strips horizontally and then vertically on top of your pie, lightly brushing with egg yolk for a better looking surface. Bake 35 to 30 minutes, and leave it cool before serving for a better flavour.
